Released in 2024, From Farm to Table is the result of a close collaboration between Rosa Kouwenhoven and the chefs of Green Safaris. The cookbook brings together recipes that reflect the way food is sourced and prepared across the Green Safaris properties—anchored in local, seasonal ingredients grown through community-supported farming.
The title refers to the Foundation’s broader commitment to sustainable food systems: from the Ila Community Farm and Mukuni Community Farm, to the check dams and communal gardens that make cultivation possible in dry seasons.
These projects don’t just supply fresh produce to the lodges—they also provide training, income, and food security to the surrounding communities. The recipes in the book are drawn from this context. Many use ingredients grown nearby, and the techniques reflect low-waste, resource-conscious cooking that aligns with the Foundation’s environmental goals. Alongside the recipes are short stories and profiles that highlight the people behind the dishes—chefs, farmers, and community members alike.
